Allulose is a low-calorie sweetener that is naturally found in small quantities in certain foods, such as figs, and raisins. It belongs to the class of sugars known as monosaccharides. Allulose has a similar taste and texture to table sugar (sucrose) but contains fewer calories and has a lower glycemic index.
For our gummies, allulose is used as a sweetener and bulking agent to provide sweetness without the high calorie content associated with traditional sugars like sucrose or corn syrup. It allowed us to create gummies with a similar taste and texture to conventional gummy candies but with reduced sugar and calorie content.
It's worth noting that while allulose is classified as a rare sugar, it is not metabolized by the body in the same way as traditional sugars, such as glucose or fructose. As a result, it provides fewer calories and has minimal impact on blood sugar levels.
